Grown in the misty mountains of Kirishima, in southern Japan, this first-harvest matcha comes from a single, passionate producer, renowned for the purity of his work. Thanks to rich volcanic soil and crystal-clear water, he offers a matcha of exceptional quality —smooth, silky, and without any bitterness.

After testing more than 14 varieties, this is the one I chose for the shop: a matcha that is balanced, refined, and simply delicious. Stone-ground using the traditional Japanese method, it retains all its freshness and nutritional richness.

Taste: A delicate, vegetal profile with a hint of umami, perfect for a creamy matcha latte or enjoying neat. No bitterness, just a silky smoothness.

Ideal as a traditional matcha tea or a premium latte.

Preparing matcha tea:

  1. Sift ½ tsp of matcha into a bowl or cup.
  2. Add 60 ml (2 oz) of hot water (just before boiling, around 75–80°C).
  3. Whisk vigorously in a zigzag motion (with a bamboo or electric whisk) until a nice foam is obtained.
  4. Add a little more hot water to suit your taste.


Latte version:

Prepare your matcha as above, then add your favorite hot, frothy milk.
Personally, I froth my oat milk, then gently pour it over my matcha.
